The trout is a fish of the family of the salmon. The variety Rainbow is originary das pure waters dos rivers dasmountains da America do North (Joined States, Canada and Alaska). In the Europe its better adaptation if gave in the rivers of the Alpsand the Pyrenees. In the South America it was adapted well in Andes and the Brazilian mountain, where it was introduced in 1949, with eggs brought of the Denamark. They are found in the mountain ranges of São Paulo, Minas Gerais, Rio  de Janeiro, Paraná, Santa Catarina and Rio Grande do Sul. Our trouts are created in the city of  Itamonte, in the Mountain range of the Mantiqueira, Minas Gerais, in the bordering region to Rio e Janeiro and São Paulo.

It is a fish of scales; prolongated and a little compressed. The coloration of the back varies of the green chestnut for, the laterals are gray and the white womb. It presents dark dots spread by the body and paddles. It reaches until 60cm of total length and 2kg. With 30 centimeters and 250 grams, it presents the ideal condition of consistency and flavor for the consumption.

Demanding fish, it only reaches the size and the necessary vigor in health fulen vironments, with pure water, oxigenada well, low-temp (between 13 and 17 degrees C), crystalline and chain.
